Cheesecake is my favorite dessert but it's so fattening that I only have it once a year, for my birthday, until now. I found this wonderful cheesecake recipe that is totally guilt free with only 5g fat and 195 calories and just as delicious as regular cheesecake. Believe me, you won't miss those extra calories!
1/4 cup chocolate wafers, crushed (about 4)
2 cups thick yogurt
1 pkg Neufchâtel cheese, softened
2/3 cup sugar
1/4 cup fat free milk
2 tblsp all-purpose flour
2 tblsp vanilla
1/2 cup cholesterol-free egg product or 3 egg whites
1 tblsp cocoa
1 tsp chocolate extract
Pre-heat oven to 300°.
Spray 9”x3” spring form pan with nonstick cooking spray. Sprinkle chocolate wafer crumbs on bottom of pan. Beat thick yogurt and cheese in medium bowl on medium speed until smooth. Add sugar, milk, flour, vanilla and egg whites. Beat on medium until smooth, about 2 minutes. Place 1 cup of the batter in small bowl. Beat in cocoa and chocolate extract until blended. Carefully spread vanilla batter over crumbs in pan. Drop chocolate batter by spoonfuls onto vanilla batter and swirl through batter with metal spatula creating a marble effect, being careful not to touch the bottom of the pan. Bake 1 hour. Turn off oven and leave cheesecake in oven for additional 30 minutes. Remove from oven and cool for 15 minutes. Place in refrigerator for another 3 hours or overnight. Can be served with your favorite fruit topping such as strawberries, blueberries, raspberries, or maybe even a chocolate drizzle.
